Researchers find that potato chips, among other processed foods, are loaded with the cancer causing chemical, acrylamide (uh-kril-uh-mahyd). The substance forms when carbohydrate-rich foods are cooked at very high temperatures. Some of the worst offenders—Pringles and other potato chips and French fries. Federal regulations limit acrylamide in drinking water to just over one-tenth micrograms per 8-ounce glass. However, a six-ounce serving of French fries can contain 60 micrograms of acrylamide. That's about FIVE HUNDRED times over the allowable limit. Scientists find the amount in potato chips is even more staggering. In some cases, more than NINE HUNDRED times over the legal limit. Such studies prompted the state of California to sue potato chip makers in 2005, citing a failure to warn consumers about the health risks of acrylamide in their products. The Frito-Lay company and several other potato chip manufacturers agreed to a settlement in 2008. The companies pledged to reduce the acrylamide levels in their chips to 275 parts-per-billion by 2011, which is low enough to avoid needing a cancer warning label. But the jury is still out on whether or not manufacturers have truly reached the requirements. A major challenge lies in how the food is made. Since acrylamide is not intentionally added, but rather a byproduct of cooking or processing at temperatures above 212-degrees Fahrenheit, researchers believe that changes in the current manufacturing methods would reduce acrylamide intake by no more than 40 percent . This brings the question--have potato chip makers really succeeded in reducing acrylamide levels to within legal limits? That data has yet to be updated. However researchers do issue another warning—baked potato chips may be worse for you than fried. The U.S. Food and Drug Administration found acrylamide levels in baked chips may be at more than three times the level of acrylamide as regular chips! This comes as name brands such as Pringles and companies like Frito Lay advertise so-called healthier baked varieties of their products. In fact, research suggests that baking processed potatoes at high temperatures may be one of the worst ways to cook them. FDA findings on the name brand Ore Ida may prove the point. A study shows Ore Ida Golden Fries contain about 107 parts-per-billion of acrylamide in the regular fried variety, but the baked version contains nearly 11-HUNDRED parts-per-billion. And if that were not enough, published research also shows dozens more potential toxins form when processed food is heated to high temperatures. In the study published in 2007, scientists concluded that consumers are far less likely to ingest dangerous levels of acrylamide and other carcinogens when eating home-cooked foods compared to industrially-prepared snacks. Still, some potato chip manufacturers are working to improve the image of their products. By the end of 2011, about half of Pepsi's Frito-Lay brand snacks will be reformulated with all-natural ingredients. The switch is part of PepsiCo's master plan to tap into the healthy foods market share. The Wall Street Journal recently reported the company hopes to boost their nutrition business from $10 billion dollars to $30 billion dollars by 2020. Some 60 Frito-Lay brand snacks are scheduled for an all-natural makeover, with the company removing monosodium glutamate—also known as MSG—and replacing it with natural seasonings, such as molasses and paprika. Artificial colors will be replaced with beet juice, purple cabbage and carrots. Nutritionists warn that the reformulated chips still lack true health benefits and that the processing depletes food of valuable micronutrients. They urge consumers to eat foods that are raw or minimally processed to avoid the types of toxic byproducts that come from industrially manufactured snacks. Health care experts agree that cancer, heart disease, obesity, and diabetes have a dietary component. That, with these latest findings on toxins in convenience foods may be causing a shift in consumer demand and altering the direction of food manufacturers in a positive way. Les chips Les chips de pommes de terre comportent des quantités élevées de sodium car elles sont très salées. Rappelons que la consommation de sodium peut augmenter le niveau de cholestérol et provoquer l’hypertension, ce qui conduit potentiellement à des crises cardiaques et accidents vasculaires cérébraux. D’autre part, les chips contiennent de l’acrylamide, une substance cancérigène qui se crée lors de la transformation des aliments à des températures très élevées. Selon Dale Hattis, professeur à l’Université Clark, l’acrylamide est la principale cause du cancer aux États-Unis. 5. Les donuts Les donuts sont principalement préparés avec de la farine blanche, du sucre et des matières grasses. Ces aliments sont connus pour être responsables de la prise de poids, et capables d’augmenter le risque de certaines maladies graves telles que le diabète et les maladies cardiaques. 6. Le sucre La consommation de sucre est considérée comme une des principales causes d’obésité et de diabète. Le sucre est lié à de nombreux problèmes de santé comme les troubles du système digestif, les maladies du foie et du pancréas. La consommation de sucre a également des effets négatifs sur le cerveau, il dégrade les capacités d’apprentissage et de mémorisation, et réduit les facultés intellectuelles. 7. Such food products are grown using harmful chemicals and, when consumed, can lead to immune system, brain and liver damage. Refined sugar, artificial sweeteners and fructose-rich sweeteners like high-fructose corn syrup are not good for your health. These products tend to rapidly spike insulin levels and feed the growth of cancer cells. Refined White flour contains excess carbohydrates that are not good for your health and even increase the risk of cancer. During the milling process, white flour is bleached with chlorine gas, which is highly toxic for the body. Processed meats such as ham, sausage and bacon have chemicals and preservatives like sodium nitrates, which make them bad for your health. In addition, processed meat contains excessive salt, which is also not good for you. Pickled and smoked foods are delicious but, at the same time, very harmful to the body. The surprising foods that could make you sick - and how to avoid the risk From spinach to parsnips, ice cream and even fruit, these are the unlikely dangers lurking in your cupboards We are always being told to eat healthily but even certain foods we consider good for us can become dangerous depending on how you cook or handle them. This week, the UK’s top food watchdog warned that our beloved crispy roast potatoes, chips and well-done toast could cause cancer. The Food Standards Agency says overcooking potatoes and bread raises levels of the carcinogenic chemical acrylamide and their new campaign, Go For Gold, is aimed at discouraging families from cooking their spuds into golden brown roasties , as acrylamide has been shown to cause disease in lab rats and mice. Steve Wearne, the FSA’s director of policy, says: “The majority of people are not aware that acrylamide exists, or that they might be able to reduce their intake.” But starchy foods aren’t the only things we need to be worry about. There are a raft of products that could be dangerous when over or undercooked, or even reheated. Nutritionists Jo Travers and Annemarie Aburrow talk us through the risks of some not-so-innocent food items and how to handle them carefully. Celery and spinach They’re staple ingredients in our favourite homemade soups or casseroles, but celery and spinach should be avoided if you’re planning on reheating a batch. The nitrate contents of the vegetables which give them some goodness may be problematic if you heat them for a second time, as it can cause the release of these cancer-causing toxins. Avoid the risk: Either eat all the food straightaway or pick out the celery or spinach before reheating the dish. Jo adds: “Celery also contain psoralens which can cause sensitivity to sunlight if eaten raw, but that’s a pretty low risk in this country as our sunlight is poor.” Rice Uncooked, it sometimes contains spores of bacteria that can cause food poisoning and, when it’s cooked, the spores can survive. If the rice is left standing at room temperature, the spores will multiply and may produce poisons that cause vomiting or diarrhoea. The longer cooked rice is left at room temperature, the greater the risk. Avoid the risk: “Ideally rice should be cooked and eaten straight away,” says Jo. “If you are going to be storing the cooked rice, cool it quickly and keep it in the fridge and eat it within 24 hours.” Like celery, beetroot is rich in nitrates and heating it up a second time can make it release its toxins. But the nitrate risk would only really be a danger if our salad favourite was eaten in massive amounts, so eat beetroot in moderation, says Annemarie. Avoid the risk: Eat it cold after it has been cooked rather than reheating it again. Red kidney beans n their raw or undercooked state, kidney beans are a no-no as they contain toxins called kidney bean lectin. Many raw beans contain these but kidney beans have the highest toxin levels and can lead to food poisoning. Avoid the risk: Always cook them. Jo says: “Tinned beans have already been cooked properly but when using dried kidney beans, follow these three steps to destroy the toxins: soak the dried beans in water for at least 12 hours; drain and rinse the beans then cover them with fresh water and boil them vigorously for at least 10 minutes; then simmer the beans for around 45-60 minutes to make them tender.”
