Researchers find that potato chips, among other processed foods, are loaded with the cancer causing chemical, acrylamide (uh-kril-uh-mahyd). The substance forms when carbohydrate-rich foods are cooked at very high temperatures. Some of the worst offenders—Pringles and other potato chips and French fries. Federal regulations limit acrylamide in drinking water to just over one-tenth micrograms per 8-ounce glass. However, a six-ounce serving of French fries can contain 60 micrograms of acrylamide. That's about FIVE HUNDRED times over the allowable limit. Scientists find the amount in potato chips is even more staggering. In some cases, more than NINE HUNDRED times over the legal limit. Such studies prompted the state of California to sue potato chip makers in 2005, citing a failure to warn consumers about the health risks of acrylamide in their products. The Frito-Lay company and several other potato chip manufacturers agreed to a settlement in 2008. The companies pledged to reduce the acrylamide levels in their chips to 275 parts-per-billion by 2011, which is low enough to avoid needing a cancer warning label. But the jury is still out on whether or not manufacturers have truly reached the requirements. A major challenge lies in how the food is made. Since acrylamide is not intentionally added, but rather a byproduct of cooking or processing at temperatures above 212-degrees Fahrenheit, researchers believe that changes in the current manufacturing methods would reduce acrylamide intake by no more than 40 percent . This brings the question--have potato chip makers really succeeded in reducing acrylamide levels to within legal limits? That data has yet to be updated. However researchers do issue another warning—baked potato chips may be worse for you than fried. The U.S. Food and Drug Administration found acrylamide levels in baked chips may be at more than three times the level of acrylamide as regular chips! This comes as name brands such as Pringles and companies like Frito Lay advertise so-called healthier baked varieties of their products. In fact, research suggests that baking processed potatoes at high temperatures may be one of the worst ways to cook them. FDA findings on the name brand Ore Ida may prove the point. A study shows Ore Ida Golden Fries contain about 107 parts-per-billion of acrylamide in the regular fried variety, but the baked version contains nearly 11-HUNDRED parts-per-billion. And if that were not enough, published research also shows dozens more potential toxins form when processed food is heated to high temperatures. In the study published in 2007, scientists concluded that consumers are far less likely to ingest dangerous levels of acrylamide and other carcinogens when eating home-cooked foods compared to industrially-prepared snacks. Still, some potato chip manufacturers are working to improve the image of their products. By the end of 2011, about half of Pepsi's Frito-Lay brand snacks will be reformulated with all-natural ingredients. The switch is part of PepsiCo's master plan to tap into the healthy foods market share. The Wall Street Journal recently reported the company hopes to boost their nutrition business from $10 billion dollars to $30 billion dollars by 2020. Some 60 Frito-Lay brand snacks are scheduled for an all-natural makeover, with the company removing monosodium glutamate—also known as MSG—and replacing it with natural seasonings, such as molasses and paprika. Artificial colors will be replaced with beet juice, purple cabbage and carrots. Nutritionists warn that the reformulated chips still lack true health benefits and that the processing depletes food of valuable micronutrients. They urge consumers to eat foods that are raw or minimally processed to avoid the types of toxic byproducts that come from industrially manufactured snacks. Health care experts agree that cancer, heart disease, obesity, and diabetes have a dietary component. That, with these latest findings on toxins in convenience foods may be causing a shift in consumer demand and altering the direction of food manufacturers in a positive way. With this in mind, the campaign is recommending that people cook starchy foods like bread and potatoes until they are golden yellow or golden brown to reduce the amount of acrylamide that forms. Les chips sont des tranches de pommes de terre fines qui sont frites dans l’huile.Elles sont normalement assaisonnées au sel, mais aujourd’hui, elles se présentent sous différentes saveurs et arômes.Entre fromage, sauce piquante, barbecue ou encore oignon, le choix est large, pour le plus grand plaisir des gourmands.Prises pour caler une petite faim, les chips sont appréciées par les adultes mais aussi par les enfants pour leur goût.Bien qu’elles soient décriées pour leur caractère calorique, elles restent tout de même très prisées et ont même été détournées en version plus « healthy », soit cuite au four.Cependant, les inconvénients que présentent les chips dépassent de loin les calories ingérées en plus.En effet, les chips représentent un réel danger pour la santé et ceci revient principalement à leur méthode de fabrication.Les boites de chips qui remplissent les grandes surfaces renferment beaucoup plus que des lamelles de pommes de terre.Et il n’est pas ici question que des marques cheap, mais plutôt de la majorité des marques qui proposent ce genre de produits et même les plus connues d’entre elle, notamment Pringles.Les ingrédients utilisés pour fabriquer les chips sont : les lamelles de pommes de terre (heureusement),  des flocons de pommes de terre, du blé et du maïs.Tous ces aliments sont mélangés afin d’obtenir une sorte de pâte.Celle-ci sera ensuite placée dans des moules pour avoir la forme finale des chips.Les chips sont ensuite frites dans l’huile, séchées, puis aromatisées avant d’être emballées.Les ingrédients utilisés dans les chips ne sont pas les responsables de leurs effets nocifs.Ce sont plutôt les processus de fabrication et de cuisson qui font de cet aliment un danger.En effet, le processus de préparation des chips entraine la formation d’une substance chimique que le CIRC (centre international de recherche sur le cancer) a classé  comme potentiellement cancérigène pour l’homme ; l’acrylamide.Cette matière a tendance à se former dans les aliments riches en amidon, pendant leur cuisson à haute température, notamment durant les fritures.Elle est le résultat d’une réaction chimique entre l’aspargine, un acide aminé, et les sucres.L’acrylamide se retrouve ainsi dans différents aliments, notamment les biscuits et les chips évidemment.Tenant compte de ces faits, les chips peuvent donc être considérées comme dangereuses pour la santé.D’autant que l’acrylamide est classée comme cancérigène et génotoxique par l’European Food Safety Authority (EFSA).En plus d’augmenter les risques de cancer, elle peut endommager l’ADN.Rappelons, toutefois, que ces informations sont tirées des résultats d’études menées sur des animaux.Celles menées sur l’homme restent peu concluantes.Or, cela ne veut pour pas dire que cette substance est innocentée !Par ailleurs, les résultats du projet HEATOX (Heat-generated Food Toxicants) ont démontré qu’il existe d’autres substances formées lors de la cuisson des chips et pouvant être cancérigènes et toxiques.Les données de ce projet ont conclu qu’une cuisson à haute température entraine la formation de 800 composants.52 parmi eux, peuvent conduire au cancer.Étant présente dans différents aliments comme le café, le pain grillé, les frites ou encore les chips, il peut être difficile de l’éviter complètement.Toutefois, il est possible de réduire l’exposition à cette matière.Pour cela, il est recommandé d’éviter de trop chauffer l’huile de cuisson ou de cuire les aliments plus qu’il ne le faut.Les parties brunes ou trop dorées des aliments frits ou cuits au four, étant celles qui contiennent le plus d’acrylamide, doivent être évitées.Enfin, il est important de rappeler que la consommation de tous les aliments transformés, souvent riches en sel, gras et sucre est fortement déconseillée, parce qu’elle augmente les risques de surpoids, de cancer ainsi que de maladies cardiovasculaires et de diabète.Il est important de privilégier tout ce qui est naturel, et d’avoir un régime alimentaire équilibré riche en fruits, légumes, céréales de grains entiers et  protéines maigres.

Cancer is an abnormal growth of cells. There are more than 100 types of cancer, including breast cancer, skin cancer, lung cancer, colon cancer, prostate cancer, and lymphoma. Possible signs and symptoms include a lump, abnormal bleeding, prolonged cough, unexplained weight loss and a change in bowel movements. Many cancers can be prevented by not smoking, maintaining a healthy weight, not drinking too much alcohol, eating plenty of vegetables, fruits and whole grains, not eating too much processed and red meat, and by avoiding many cancer causing foods that we have listed below. Microwave popcorn bags are lined with perfluorooctanoic acid, a compound that has been linked to various types of cancer, including liver, testicular and pancreatic cancer. Canned foods allow you to enjoy your favorite vegetables throughout the year. However, if you are concerned about your health, avoid canned food, especially canned tomatoes. The cans used to pack tomatoes and other foods are lined with a product called bisphenol A, BPA, an endocrine disruptor that may mimic or disrupt hormones and increase the risks for breast cancer, prostate cancer, early puberty, metabolic disorders, infertility, and several other problems. Farmed salmon is nowhere near as healthy as wild salmon, and eating farmed salmon puts you at a higher risk of developing cancer. Farm-raised fish are fed unnatural diets and contaminated with chemicals, antibiotics, pesticides and other known carcinogens found in materials like asbestos. Hydrogenated oils are vegetable oils, which cannot be naturally extracted like olive oil, soy or canola oil, they are chemically extracted from vegetables and is again chemically treated to change the smell and taste. This process turns unsaturated fat into a stable solid fat, resulting in trans fatty hydrogenated oil which is considered to be the worst type of fat and is known to cause cancer, heart disease, and immune system problems. Potato chips are deep-fried in temperatures above 120 degrees Celsius, which causes them to create a material called acrylamide, a well-known carcinogen found in cigarettes. Genetically modified foods (GMOs) are a rapidly growing industry and have made their way into the majority of our foods like corn, potatoes, grains and soybeans. Such food products are grown using harmful chemicals and, when consumed, can lead to immune system, brain and liver damage. Refined sugar, artificial sweeteners and fructose-rich sweeteners like high-fructose corn syrup are not good for your health. These products tend to rapidly spike insulin levels and feed the growth of cancer cells. Refined White flour contains excess carbohydrates that are not good for your health and even increase the risk of cancer. During the milling process, white flour is bleached with chlorine gas, which is highly toxic for the body. Processed meats such as ham, sausage and bacon have chemicals and preservatives like sodium nitrates, which make them bad for your health. In addition, processed meat contains excessive salt, which is also not good for you. Pickled and smoked foods are delicious but, at the same time, very harmful to the body. In fact, smoked meats that pick up tar from the smoking process cause extreme harm to your body. Plus, most pickled foods contain nitrates that turn into N-nitroso, which increases your risk of cancer.

A California judge is requiring cancer warning labels on coffee. So we thought we’d take look at some of the other highly improbable risks associated with your cup of joe. We love a good cup of coffee at Risk Bites. So we were rather dismayed to discover that California judge William le Jeunesse has decided that coffee could cause cancer, and that under Proposition 65, warning labels need to be posted by companies. The ruling is based on the presence of acrylamide – a chemical that’s formed as the coffee beans are roasted, and that’s listed as a probable carcinogen by the International Agency for Research on Cancer, or IARC. Acrylamide is also found in many other foods, and is created when you fry foods. The trouble is, the California decision is based hazard rather than risk -- it depends on the potential of this substance to harm you, not the probability of harm occurring. So it’s hard to know whether to expect Starbucks junkies to start keeling over in the street (probably not – actually, definitely not!), or whether your chances of winning the national lottery are actually marginally better than having a bad coffee experience.
